Full job description

MINA Group is seeking a versatile Pastry Tournant Chef to support both pastry and savory operations across our restaurants. This traveling culinary role provides hands-on coverage during leadership transitions, staffing gaps, and new restaurant openings. You will step into different kitchens, uphold our standards, train teams, and help each restaurant deliver an exceptional guest experience. What you’ll do

  • Lead pastry production and service while supporting savory stations and kitchen operations as assignments require.

  • Provide culinary leadership coverage at existing restaurants and assist with new openings across owned and restaurant management agreement (RMA) properties.

  • Partner with Executive Chefs, pastry leaders, and corporate culinary and operations teams to assess needs and strengthen execution.

  • Train and coach cooks and culinary interns on technique, organization, food quality, and service standards.

  • Support ordering, inventory, waste control, scheduling, and labor management.

  • Maintain high standards for food safety, cleanliness, presentation, and consistency while adapting quickly to each kitchen.

What you bring

  • Strong pastry fundamentals, including production, finishing, and service, along with the ability to work confidently on savory stations.

  • At least four years of experience in a high-volume, fine-dining kitchen, including one year in a leadership role.

  • The judgment to take ownership of an assignment, identify priorities, and lead a team in an unfamiliar environment.

  • Clear communication, strong organization, attention to detail, and a genuine interest in teaching others.

  • Working knowledge of inventory and labor controls, food safety practices, and kitchen operating standards.

  • Ability to frequently lift up to 40 pounds and work the hours needed to support restaurant operations.

  • A culinary degree and Spanish language skills are pluses.

About the Restaurant Excellence Team The Restaurant Excellence Team (REX) gives culinary leaders the opportunity to learn MINA Group’s standards, systems, and concepts through assignments at multiple restaurants. The goal is for REX members to move into a full-time leadership position at a MINA Group restaurant. While timing depends on individual development and available positions, we expect this transition to occur within 12–18 months of hire. Travel and location Extensive travel is required. Candidates must reside in a market where MINA Group currently operates a restaurant and must be open to relocation for a future permanent assignment. For assignments outside your local market, travel expenses and a per diem are reimbursed in accordance with the MINA Group Travel Policy. Reimbursement and per diem do not apply to assignments within your local market unless approved by your director before the assignment begins.
