Full job description
Our client, a modern Asian Fusion restaurant in Orange County, CA is seeking a skilled, creative, and detail-oriented Sushi Chef to lead their Sushi station. This role will be responsible for developing and executing a high-quality sushi offering that aligns with their elevated, modern Vietnamese dining experience.
The ideal candidate brings strong technical sushi skills, a passion for premium ingredients, and the ability to contribute to menu innovation while maintaining consistency, cleanliness, and operational excellence.
Key Responsibilities

Lead the execution and daily operations of the sushi station

Prepare sushi, sashimi, nigiri, and specialty rolls with precision and consistency

Assist in the development of a unique sushi menu that complements AnQi’s brand and culinary direction

Ensure the highest standards of fish quality, freshness, and presentation

Maintain proper handling, storage, and rotation of all seafood and ingredients

Uphold all health, safety, and sanitation standards (HACCP compliance)

Collaborate with the Executive Chef on seasonal offerings and menu updates

Train and mentor team members as the sushi program grows

Manage prep, ordering, and inventory specific to the sushi station

Maintain a clean, organized, and efficient workstation at all times
Qualifications

3+ years of experience as a Sushi Chef or strong Sushi Cook in a high-quality restaurant

Strong knife skills and foundational knowledge of sushi preparation techniques

Experience working with premium fish and seafood sourcing standards

Understanding of food safety practices specific to raw fish handling

Ability to work in a fast-paced, high-volume environment while maintaining attention to detail

Creative mindset with interest in menu development and modern presentations
