【昆明洲际酒店】中餐厨师长-滇菜

1、负责中餐厨房（滇菜方向）的日常运营与管理工作，包括菜品出品、人员调配及工作流程优化，确保厨房高效运转。 2、主导滇菜菜品的研发与创新，结合时令食材与市场需求，定期更新菜单，提升菜品竞争力与顾客满意度。 3、严格把控食材采购、验收及库存管理，合理控制食材成本与损耗，确保毛利率达标。 4、监督并执行厨房食品安全与卫生标准，确保符合国家及酒店相关法规，杜绝安全事故。 5、负责厨房团队的建设与培训，提升员工专业技能与工作效率，组织菜品标准化培训及考核。 6、协调与其他部门（如餐厅服务、采购、宴会等）的沟通，确保菜品出品及时、质量稳定，配合大型宴会及VIP接待任务。

1、精通滇菜烹饪技法，熟悉云南本地食材特性及风味特点，能独立完成菜品研发与创新。 2、具备3年以上中餐厨房管理经验，有酒店或大型餐饮企业同岗位经历者优先。 3、熟悉厨房成本核算、食材采购及库存管理流程，具备一定的财务意识。 4、持有健康证及食品安全相关证书，熟悉食品卫生法规与厨房安全操作规范。 5、具备优秀的团队领导能力与沟通协调能力，能有效管理10人以上团队。 6、抗压能力强，能适应酒店行业高强度工作节奏及节假日轮班。
