Full job description

  • Knowledge of principles and procedures of food management.

  • Ability to teach food preparation and cooking.

  • Ability to plan, assign and supervise the work of food service personnel.

  • Ability to plan, assign and prepare inspections and corrective action reports.

  • Knowledge and ability to manage a large institutional food service operation in strict adherence to all state statutes and departmental policies.

  • Responsible for food service training for institutional personnel.

  • Must be certified as hazard analysis & critical control point (HACCP) and/or serve safe manager or must attain certification within six (6) months of employment.

Must successfully complete four (4) weeks of SCDC Basic Training upon hire.

State of South Carolina Minimum Requirements: Related supervisory experience in food service.

SCDC Minimum Requirements:

  • High school diploma and five (5) years’ experience in quantity and quality cooking, and one (1) year of supervisory experience.
  • Must be certified in Hazard Analysis & Critical Control Point (HACCP) or SERV Safe Manager or attain within six (6) months of employment.
  • Must be certified by South Carolina Department of Corrections Training Academy or must successfully complete SCDC basic training upon hire.
  • Must successfully complete basic supervisory course within eighteen (18) months of employment.
